Irish Seafood Company wins prestigious ‘Great Taste Award’ for Innovative Smoked Salmon Product

Dunn’s of Dublin, one of Ireland’s most successful seafood processors, has won the prestigious Great Taste Gold 2012 Award for its ‘Applewood and Oakwood Smoked Salmon’ range produced by the company for SuperValu.

Dunn’s of Dublin, one of Ireland’s most successful seafood processors, has won the prestigious Great Taste Gold 2012 Award for its ‘Applewood and Oakwood Smoked Salmon’ range produced by the company for SuperValu.

Described as the ‘Oscars’ of the Food World or the ‘Epicurean equivalent of the Booker Prize’, a Great Taste Award is a major achievement for any business. Dunn’s of Dublin certainly deserve the recognition as a great deal of work went into this exceptional smoked salmon product with the assistance of Food Technologists in the Bord Iascaigh Mhara (BIM) Seafood Innovation Hub in Clonakilty, Co. Cork. The company worked closely with the BIM team using systematic trials to perfect a novel smoking process resulting in a delicious smoked salmon product with subtle flavours and aromas.

We have worked hard with SuperValu to expand our product range and we are constantly striving to develop new innovative products that will satisfy our customers’ changing tastes. We plan to add to this range in the near future’ 

BIM’s Seafood Innovation Hub (SDC) works to facilitate Irish seafood companies to add value to their products through innovation and new product development helping to ensure that their product offerings keep pace with changing consumer preferences. The SDC supports Irish seafood companies by improving their capabilities in a number of key areas including, new product development, new packaging and leading edge processing technologies.

John Fagan, Senior Food Technologist with BIM, added; ‘It was a pleasure to work with Oceanpath as they have a team of highly trained kiln operators who understand both the process and how to achieve maximum product quality and flavour. This particular project involved systematic tweaking of salting, smoking times and temperatures to deliver a product of exceptional quality. I am confident that the entire range will be a great success’
