BIM recently held an advanced training course for 6 seafood retailers in the renowned training centre, Centre Formation aux Produits de la Mer et de la Terre (CFPMT) in the fishing port of Boulogne Sur Mer, France.
The hands-on four day training course was developed in association with CFPMT and focused on advanced fish filleting and preparation techniques plus the preparation and cooking of finfish and shellfish. The course was delivered by experienced facilitators and a translator was also present. Participants also benefited from a tour of local retail outlets and an early morning fish auction.
